Blueberry Baked Oats

Do you want a change up from the ordinary bowl of porridge? I’ve never been much of a fan of overnight oats but I’ve been dying to try baked oats. This one is simple, only contains whole foods and is so nutritious & delicious😊

Oats are brilliant for balancing blood sugar levels (steady release of energy throughout the day), the banana is a natural sweetener & source of potassium (regulating fluid balance), ground flaxseed contains your omega 3’s (can help reduce blood fat levels & cholesterol) and blueberries are full of antioxidants (for fighting free radicals in your body).

Servings: 2 - 3

Ingredients:

  • 150g Oats

  • 1/2 tsp cinnamon

  • 2 tbsp ground flaxseed

  • 150ml milk (I use soy milk)

  • 150ml water

  • 100g fresh/frozen blueberries (I used frozen)

Method:

  • Preheat oven to 180 degrees (160 in a fan oven) 

  • In a large bowl add the oats, cinnamon, and ground flaxseed and mix. Then add the rest of the ingredients and mix to combine well. 

  • Transfer to a baking dish and pop into the oven. Allow it to bake for 25 - 30 minutes. 

  • Remove from the oven and serve with your favourite toppings - yogurt, banana, nut butter and maple syrup goes very well with it.
