Vegan Pesto Pasta

Pasta is a food I don’t eat very often purely due to more of a preference towards other foods. However, I have always enjoyed pesto pasta and really wanted to try and make my own pesto sauce and the one below turned out really tasty. 

Also you wouldn’t really think it by looking at it but there are 8 different vegetables on this plate between the pesto sauce itself, the peas and asparagus and the side salad. 

Vegan Pesto Pasta

Ingredients: 

  • 1 cup of Fresh Basil Leaves

  • Half an avocado

  • Handful of pine nuts

  • 3 garlic cloves

  • 2 tbsp lemon juice

  • 1 tbsp nutritional yeast 

  • 3 tbsp water 

  • 1/4 tsp salt

Instructions

Put all ingredients into a blender and blend until smooth and creamy. 

Serving Suggestion 

Serve over your favourite whole grain pasta with some garden peas, grilled tempeh and a side salad.
