Chickpea and Sweetcorn Sandwich Filler
Chickpeas are an excellent source of fibre, plant-based protein and are packed full of vitamins and minerals such as folate (healthy cell growth), manganese (improve bone health) and iron (for your red blood cells). Chickpeas are also beneficial at reducing blood sugar levels helping you to achieve that steady flow of energy throughout the day and control cravings. So how can I get some more of this plant powerhouse into my diet?
Here’s one of my favourite recipes for a delicious chickpea and sweetcorn sandwich
Ingredients:
1 tin chickpeas
1/2 tin sweetcorn
1 tbsp vegan mayonnaise
1/2 tsp dijon mustard
Pinch of salt & black pepper
Wakame seaweed (optional)
Method:
Drain the chickpeas and mash using a masher or fork.
Then add half a tin of sweetcorn, vegan mayonnaise, dijon mustard and a pinch of salt and black pepper & mix with a spoon.
Enjoy this on your favourite toasted wholegrain bread with your desired toppings such as baby tomatoes, rocket & red onion.
I added some soaked wakame seaweed to my chickpea mixture for a boost of iodine (required to make thyroid hormones for controlling the bodies metabolism) and it adds a delicate salty flavour.
