Black Bean Brownies
What’s a nice sneaky way to get more legumes into your weekly diet...bake them up into brownies of course. These brownies are made with a whole tin of black beans and so are high in fibre, plant-based protein & folate (growth & development of cells) and only contain natural sugar and healthy fats. This batch makes about 8 snack size brownies that will satisfy any sweet tooth. The hardest part is stopping at one!
Ingredients:
1 tin black beans (drained and rinsed)
30g oats or oat flour
25g cocoa powder
20g peanut butter
50g maple syrup
1/2 tsp baking powder
Pinch of salt
50ml water
4 squares (40g) 70-85% dark chocolate (cut up into chocolate chip size pieces)
Method:
Preheat oven to 180 degrees (160 in a fan oven).
In a food processor mix all ingredients (except the dark chocolate chips and water) together until smooth. If it blends into a big ball, add in water slowly to the mix as it’s blending until it’s smooth.
After blending mix in the chocolate chips.
Transfer to a baking dish and pop into the oven. Allow to bake for 15 - 20 minutes.
Remove from the oven and let it cool.
Top tip - they are best served nice and cold so pop them into the freezer for 30 minutes or fridge for a few hours before serving.
