Seitan "Roast"

Seitan is an excellent healthy plant-based protein option. It’s made with vital wheat gluten which you can find in most health food shops. It’s a lot easier to make than you might think too. This dish is not suitable for anyone that is coeliac or has a gluten sensitivity as the vital wheat gluten cannot be replaced.

Seitan roast with a side of vegan gravy

Dry Ingredients

  • 250g vital wheat gluten

  • 50g chickpea flour

  • 35g nutritional yeast

  • 1 tbsp onion powder

  • 1 tbsp garlic powder

  • 1 tsp smoked paprika

  • 1 tsp cumin

  • 1 tsp dried basil

Wet Ingredients

  • 2 tbsp tomato paste

  • 2 tbsp soy sauce or tamari

  • 350ml vegetable stock

Method:

  1. In a large bowl, combine all the dry ingredients together & set aside.

  2. In another bowl, mix together the tomato paste, soy sauce, maple syrup, and broth.

  3. Add wet mixture to dry ingredients and stir until the mixture has a dough-like consistency.

  4. Move the mixture onto a clean surface and knead for no more than 2 - 3 minutes.

  5. Shape the seitan, wrap it in the parchment paper, and secure the ends. Wrap further in tin foil securing the ends again.

  6. Fill a large pot with water and bring to a boil.

  7. Place a steaming pot over the water and carefully place the seitan into the pot. Cover, return to a boil, and then reduce heat to low cooking for 60 - 70 minutes.

  8. Remove from heat and let it sit for 15 minutes.

  9. When ready to serve, remove the wrapping and slice the seitan. Drizzle some of your favourite gravy over it.
