Seitan "Roast"
Seitan is an excellent healthy plant-based protein option. It’s made with vital wheat gluten which you can find in most health food shops. It’s a lot easier to make than you might think too. This dish is not suitable for anyone that is coeliac or has a gluten sensitivity as the vital wheat gluten cannot be replaced.
Dry Ingredients
250g vital wheat gluten
50g chickpea flour
35g nutritional yeast
1 tbsp onion powder
1 tbsp garlic powder
1 tsp smoked paprika
1 tsp cumin
1 tsp dried basil
Wet Ingredients
2 tbsp tomato paste
2 tbsp soy sauce or tamari
350ml vegetable stock
Method:
In a large bowl, combine all the dry ingredients together & set aside.
In another bowl, mix together the tomato paste, soy sauce, maple syrup, and broth.
Add wet mixture to dry ingredients and stir until the mixture has a dough-like consistency.
Move the mixture onto a clean surface and knead for no more than 2 - 3 minutes.
Shape the seitan, wrap it in the parchment paper, and secure the ends. Wrap further in tin foil securing the ends again.
Fill a large pot with water and bring to a boil.
Place a steaming pot over the water and carefully place the seitan into the pot. Cover, return to a boil, and then reduce heat to low cooking for 60 - 70 minutes.
Remove from heat and let it sit for 15 minutes.
When ready to serve, remove the wrapping and slice the seitan. Drizzle some of your favourite gravy over it.
