Chickpea Blondies

You have to try these chickpea blondies and I promise you, they don’t taste like chickpeas. They are the perfect little sweet treat, packed full of protein and fibre from the chickpeas & healthy fat and protein from the nut butter. I recommend these if you want a nutritious snack that satisfies a sweet tooth.

Ingredients:

  • 1 tin chickpeas

  • 40g almond flour or oats

  • 100g peanut butter or almond butter

  • 1 tsp vanilla extract

  • 60ml maple syrup

  • 1/2 tsp baking powder

  • 1/4 tsp salt

  • 70g dark chocolate chips (I chop up a few squares of 70 - 85% dark chocolate

Method:

  1. Preheat oven to 180C. Line a loaf tin with parchment paper

  2. Throw all the ingredients (except the chocolate chips) into a food processor blending until creamy.

  3. Mix in the chocolate chips and stir well into the mixture with a spoon.

  4. Add the chickpea mixture into the loaf tin and bake for 15 - 20 minutes until golden on top.

  5. Allow it to cool fully before slicing up into 8 even squares

  6. They are best when cold so I highly recommend popping them into the fridge for a few hours or into the freezer for 30 minutes to harden a little just before serving. Enjoy!
