Four Ingredient Vegan Pancakes

Banana Oat Pancakes

Servings: 7 small pancakes

Ingredients:

  • 250g soy milk

  • 80g oats

  • 80g banana

  • 2 Tbsp flaxseed or chia seeds

  • 1 Tbsp maple syrup

  • 1 tsp cinnamon

  • 1/2 tsp baking powder

  • 1/2 tsp vanilla extract (optional)

Optional Toppings:

  • Mixed berry compote

  • Plant yogurt (soy or coconut)

  • Maple syrup 

  • Nut butter

  • Fresh fruits

Method:

  1. Throw all the main ingredients into a blender and blend for 30 seconds until completely smooth. It should be quite thick in consistency.

  2. Heat a pan over a medium heat and scoop out the equivalent of 2 - 3 tablespoons of the mixture onto the pan. Allow to cook until bubbles start to form and then flip them over and allow to cook for another minute or so. If you have a large pan you may be able to fit 2 or 3 on the pan at once.

  3. Repeat until the whole mixture is gone. It should give you around 7 small pancakes. Double or triple the ingredients if you’re serving them for the family.
