Three Grain Granola

Ingredients: 

Dry Ingredients

  • 200g buckwheat groats

  • 100g barley flakes

  • 100g rye flakes

  • 75g mix of chopped walnuts/pecans/cashews

  • 25g chia seeds

  • 40g desiccated coconut

  • 1/2 tsp cinnamon

Wet Ingredients: 

  • 80g aquafaba (liquid from tin of chickpeas)

  • 60g maple syrup

  • 1 tsp vanilla extract

Method: 

  1. Preheat oven to 160 degrees and line one or two baking trays with parchment paper.

  2. In a large mixing bowl, add all the dry ingredients and combine well.

  3. Add aquafaba to a mixing bowl and use an electric mixer to whip until it forms loose peaks which can take about 5 minutes. You should be able to turn it upside down without it moving. 

  4. Add maple syrup and vanilla to the aquafaba and whip for another 30 seconds. Scoop the aquafaba mixture into the dry ingredients and mix well, 

  5. Spread the mixture evenly on the baking trays and bake for 15 minutes minutes. Then give it a mix and allow to bake for another 10 minutes or until crispy. 

  6. Let cool completely. Store in an airtight container. It should keep for 2 weeks or so.
