Chocolate Chip Chickpea Cookies
These soft cookies are packed full of protein and fibre from the chickpeas & healthy fat and protein from the nut butter. I recommend these if you want a nutritious snack that satisfies a sweet tooth. You can store these at room temperature for up to a week in an airtight container.
Ingredients:
1 tin chickpeas
100g peanut butter
1.5 tsp vanilla extract
60g maple syrup
1 tsp baking powder
Pinch of salt
4 squares 85% dark chocolate
Method:
Throw everything except the chocolate into a food processor and blitz until completely smooth.
Chop the dark chocolate up into small chocolate chip size pieces.
Once the mixture is smooth, add in the dark chocolate chips and stir until distributed evenly around the mixture.
Preheat the oven to 175 degrees C (155 fan oven)
Then with wet hands form into balls and place on parchment paper on a flat baking tray. Gently flatten down the balls a little to form cookie shapes.
Pop into the oven for 10 minutes. Then leave aside to cool before enjoying them.
