Roasted Crunchy Chickpeas

If you want a new tasty, nutritious savoury snack then you’re reading the right post. Roasted chickpeas are amazing. If you haven’t tried them yet, I urge you to do so. 

Chickpeas are an excellent source of fibre, protein and are packed full of vitamins and minerals such as folate (healthy cell growth), manganese (improve bone health) and iron (for your red blood cells). Chickpeas are also beneficial at reducing blood sugar levels helping you to achieve that steady flow of energy throughout the day and control cravings.

Roasted chickpeas are delicious, crunchy and perfect on their own as a snack or in place of croutons in a vegan-friendly Caesar salad (recipe also on my feed). They are so quick and easy, it’s hard not to try them.

Ingredients:

  • 1 tin chickpeas, drained and rinsed

  • 1 tsp extra-virgin olive oil

  • Pinch sea salt

  • Pinch black pepper

  • 1/2 tsp smoked paprika

  • 1/2 tsp garlic powder

  • 1/4 tsp ground cumin

Method:

  1. Use an air-fryer or oven for the chickpeas. If using an oven preheat to 200°C (180°C fan oven).

  2. Drain, rinse and pat dry the chickpeas. Remove any excess skin from them.

  3. Place into a bowl and drizzle the oil on to coat. Then add the rest of the seasonings and toss to coat.

  4. Air-fry for 10 minutes or roast in the oven for 20 minutes until golden brown shaking them half way through.

  5. Leave aside to cool for a few minutes before enjoying.
