Pineapple Whip
If you haven’t tried pineapple whip before you’ve got to give it a go, it’s too easy not to. I had it in Hawaii and really wanted to recreate it. Food is a huge part of travel for me so whenever I find something I love abroad I try my best to make a homemade version.
Pineapple contains a group of digestive enzymes called bromelain which aid the break down of protein into amino acids so they are more easily absorbed by the body. This can help with digestion. Pineapples are also amazing for fighting oxidative stress preventing cellular damage in the body leading to decreased risk of chronic diseases.
And by the way, you don’t have to wait for a sunny day to try this, it’s such a lovely healthy alternative to ice-cream on any day in any weather.
Servings: 2
Ingredients:
200g frozen pineapple
100ml plant milk (I used soy)
Method:
Add the frozen pineapple and milk to a high speed food processor. Blend until smooth and creamy.
Scoop into a glass/serving bowl and enjoy on its own or you could even turn it into a smoothie bowl.
Top tip - to make this even creamier you could substitute the milk for tinned coconut milk instead 😉
